XI GELATO WORLD CUP 2026

The Gelato World Cup, a world-renowned biennial event, returns to Rimini from January 16 to 20, 2026, for its 11th edition. After the national and continental selections, 12 teams will compete at Sigep for the world title in Gelato, Pastry, Chocolate, and Haute Cuisine competitions.

Each team selected throughout the year is made up of an ice cream maker, a pastry chef, and a chef led by a team manager.

The artistic jury will consist of the Team Managers of the competing teams, supported by expert judges in the fields of gelato, pastry, and haute cuisine. They will evaluate the taste, aesthetics, innovation, and technical consistency of the competing works.

The Gelato World Cup is organized by Gelato e Cultura Srl with Sigep of IEG Exhibition Group.

The president is the first Italian world champion of gelato making who, along with the board of directors, is committed to continuing to spread artisanal gelato throughout the world.

The teams

This year’s competition will be a truly spectacular one, featuring highly professional teams composed of a gelato maker, a pastry chef, and a chef led by a team manager. They will come from 12 countries: Argentina, Belgium, China, Ecuador, France, Indonesia, Italy, Japan, Mexico, Peru, Poland, and Singapore. They will compete in eight gelato, pastry, and haute cuisine challenges (decorated gelato tub, decorated cup, mystery box, artistic gelato cake, haute cuisine entrée, artistic pieces, and gelato snacks, as well as a grand finale buffet, the presentation of all the creations).

The trials

9 tests and the final Grand Buffet

The 2026 Gelato World Cup will feature nine official rounds, plus the final Grand Buffet, which represents the culmination of the competition and celebrates the creativity and mastery of each team.

Fruit Mystery Box

A test of pure creativity: teams must make 3 kg of water-based gelato using a fruit pulp provided by sponsor Adamance, revealed only at the beginning of the challenge. The gelato must be decorated with sculpted fresh fruit, herbs, and spices.

Gelato Cake

Contestants must prepare three identical, decorated ice cream cakes, each containing at least 10 portions, plus a mock-up, with a minimum of one and a maximum of three free-form ice cream flavors.

At least one of the ice creams must be made with one ingredient from official sponsor Valrhona.

Single-serve Glass Presentation

Elegance and technique in a mini format: the teams prepare single-portion desserts served in glasses, using at least one Babbi ingredient, embellished with crunchy bases, jellies, or fresh fruit.

Gelato sticks

Teams must create 40 ice cream sticks, each with at least one Disaronno ingredient, with free choice in shape and composition. A test of balance between flavor, precision, and innovation.

Gelato Snacks

Three small masterpieces of 50g each, with ingredients from Babbi, Disaronno, or Valrhona, combining pastry, gelato, and the art of presentation.

Gourmet ice cream entrée

Gelato meets haute cuisine: each team creates hot dishes paired with a gastronomic tomato gelato, demonstrating the versatility of gelato even in the savory world.

Marron Glacé Log

A test of elegance and technique: the teams prepare ice cream logs with Agrimontana products, decorated with marron glacé, chocolate, or candied fruit.

Chocolate sculpture

Art takes shape in chocolate: each team creates a live sculpture, no more than 145 cm high and weighing 30 kg, made entirely during the competition.

Art piece on a block of chocolate

Artistic work sculpted on a single block of chocolate measuring 20x30x40 and which will host the chocolate snacks on the table of the final Grand Buffet.

Grand Buffet

The final test: each team sets up a 120cm table to display all their creations, in a harmonious blend of flavors, colors, and techniques.
